Gluten free chicken nuggets

2 chicken breasts cut into bite sized prices
Mix equal parts in a bowl
1/3 cup Oat flour
1/3 cup Teff flour
1/3 cup Brown rice flour
1/4 cup Garlic seasoning
In another bowl beat 2 eggs

Coat chicken pieces in flour mixture then egg mixture then back in the flour mixture. 

Place in pan with oil on med heat.

Cook for 5-8 min turning them occasionally.

Gluten free waffles and pancakes batter

1 egg separated
1 1/8 cups milk
1 1/4 cups oat flour
1/2 cup brown rice flour
1/2 TBS baking soda
1 TBS sugar
1/8 cup cooking oil
2 tsp Cinnamon

Separate eggs and whip egg whites
Add yolk milk oil to a large bowl.

Sift in the oat four, rice flour, baking soda and sugar.

Fold in the egg whites.

Bake in a waffle iron or on a griddle.

Gluten free Cauliflower Sweet Potato pizza crust

1/2 head of cauliflower
1 med sweet potato
1 egg
4 TBS rice flour
3/4 cup Parmesan cheese

Cook cauliflower and sweet potato until tender chop into tiny pieces place in cheese cloth or a fine staying and press out all the remaining liquid.

Place in a bowl and add the egg and flour and cheese mix together.

Spread out on a cooking sheet and bake for 5-10 min @ 400 F 

Spread out your favorite toppings and bake another 5-10 min until cheese is melted and the edges of the crust are browned.

Gluten Free Homemade carrot noodles

3/4 cup gluten free flour (we use nameste flour)
1/4 cup carrot powder (these are just dried carrots that have been milled)
1 egg
Dash of salt
Water a tsp at a time.

Combine all the dry ingredients on a counter surface. Create a well for the wet ingredients in the center. Beat the egg in the center and gently fold in the flour around the edges. Continue until the egg add oil are Incorporated. As water a tsp at a time initio the dough is plaiable but not sticky. Kneed for a minute or two. Then let it rest for 20 min under a cloth to keep it from drying out. Kneed for a few more minute then roll out on the counter and cut or run through your pasta machine.

Spicy Chicken Lasagna Roll-Ups




This is from Kraft Kitchen's So easy and fun. Definitely a keeper since my son who never eats seconds demanded he have more

1 jar (24 oz.) spaghetti sauce
1 tsp.  Italian seasoning
1 tsp. crushed red pepper
3 cups  shredded cooked chicken
2 cups KRAFT Shredded Mozzarella Cheese, divided
1/2 cup  KRAFT Grated Parmesan Cheese
2 eggs, beaten
12   rinsed cooked lasagna noodles
Make it

HEAT oven to 375ºF.

MIX first 3 ingredients; combine 1/2 cup with chicken, 1 cup mozzarella, Parmesan and eggs. Spread 1/4 cup onto each noodle; roll up.

POUR 1/2 cup of the remaining sauce into 13x9-inch baking dish; top with lasagna rolls, seam-sides down. Cover with remaining sauce and mozzarella.

BAKE 25 min. or until heated through.

MAKE AHEAD Kraft kitchens tips
Assemble roll-ups as directed. Place 6 roll-ups, seam-sides down, in each of 2 large square Ziploc® VersaGlass™ Containers*; cover with half each of the remaining sauce and mozzarella. Bake 1 container of lasagna rolls as directed. Meanwhile, cover remaining container of roll-ups with lid and freeze up to 1 month. When ready to serve, heat oven to 375ºF. Remove cover from container; cover with foil. Bake 1 hour or until heated through. (No need to thaw before baking.)

SERVING SUGGESTION
Serve with a mixed green salad tossed with your favorite KRAFT Light Dressing.
SPECIAL EXTRA
Garnish each serving with 2 tsp. chopped fresh basil just before serving.

Rise and Shine Breakfast Bagels

This is a quick fix for a morning on the go.

Plain Bagels (we use the thin bagels from Costco. You can use other kinds of bagels though I would recommend not using bagels with fruit in them)
Shredded Cheese
2 eggs
Ham Deli meat
Butter
Toaster
Microwave

We put the bagels in the toaster you want them toasted or else they can get soggy.

In a small microwave bowl spray or butter the bowl so the eggs won't stick to the dish put the two eggs in and scramble them. Cook on high for 30 second increments. You will want to stir the eggs in between the cook times to release some heat or it can get messy in the oven. 2 eggs will take about 45 second to cook so if you are making multiples add about 15 seconds for each additional 2eggs. If you hear the eggs pop stop the microwave immediately it is done any more will over cook them and cause a huge mess.

When the bagels are toasted butter and place a couple slices of ham on them. Spread the shredded cheese evenly over the ham and place the cooked egg on the top of the cheese. Put both sides of the bagel together.

If you have time eat immediately if not put it in a plastic bag and eat it on the way to school or work.

Crepes

I know when you think of Crepes you think... Eeks you can't be serious but yes quick and easy crepes.


Prep time 5 min
Cook time 10 Min for whole batch
Non stick Skillet on Medium Heat
makes about 10-12 crepes (Dependant upon the thickness of the crepes)

Combine in a blender
2 Eggs
2 Cups Milk
2 Cups Flour
2 Tbs Sugar
Pinch of salt

Add milk or flour until the mix is the consistency of heavy cream

The next step is all in the wrist. Place about a 1/4 cup of mixture in the skillet while holding it on an angle above the stove. Swirl the pan quickly until you have a even layer in a circle like pattern (mine are certainly not symmetrical). Cook on one side until it is slightly brown, at this point the Crepe should release easily and you can flip it (if you are so daring) or turn it to the other side so it can brown. Place on a plate with a towel over them to keep them warm. Don't get discouraged it takes a little time to get the right feel and movements.

Suggestions for fillings.
Desserts: We use a lot of marmalades or Jams (your choice of flavors) with whip cream or cinnamon. you can use fresh fruits and yogurt as well.
Breakfast: We use scrambled eggs for the main portion and add our favorites breakfasts meats to it.
